Delicious saganaki with sausage, anthotyro and egg
“Saganaki” refers to various Greek appetizers prepared in a small, two-handled heavy bottomed frying pan called a “saganaki” or “sagani”. Try this simple and beloved saganaki made with sausage, fresh cheese and fried eggs! Simply irresistible! Accompany with a nice glass of ouzo, tsipouro or wine!

Ingredients
200gr orange and leek pork sausage, skin removed, chopped
4-5 cherry tomatoes, cut in half
½ red pepper, chopped
¼ green pepper, chopped
4 free-range large eggs
150 g anthotyro (fresh cheese), diced
2 tbsp grape molasses
2 tbsp extra virgin olive oil
dried oregano
salt, black pepper freshly ground
Method
Step 1
Heat a large heavy bottomed frying pan and cook sausage pieces well for 2-3 minutes.
Step 2
Add oil, cherry tomatoes and peppers and cook for a couple of minutes. Make four “holes” in the pan and break one egg in each hole. Season eggs with salt and pepper and cook in medium heat until set.
Step 3
Before removing pan from heat, sprinkle with anthotyro cheese and oregano and drizzle with grape molasses. Cook for a minute and remove pan from heat. Serve smoking hot with crusty bread.
