How to make tiganites: The Greek-style pancakes

Simple in conception and preparation, tiganites, as well as similar creations such as loukoumades and crepes, are nothing more than neutral-tasting doughs made with flour and water. On this base we can make countless creations, adding just a few more ingredients sometimes for volume and other times for aroma, flavor or sweetness.

Preheat the oven to 180°C. Sift the flour and mix all the dough ingredients, then knead well until the mixture is homogenized and forms a soft dough.

Let the dough rest for half an hour. Place it in a shallow pan that has been greased with olive oil. Spread the dough with your fingers until it covers the entire surface of the pan.

Two-meter-long Ramadan pita sold by auction

A baker in the eastern province of Kars sold a 2.20-meter pita, with "Stay at Home Turkey" written on top of it using poppy and black seed prepared for the holy month of Ramadan.

Bakery owner Mustafa Kaya, who made the Ramadan pita with a dough weighing about 14 kilograms, said that he prepared such a thing in order to raise awareness to coronavirus measures.

Carnival is all about excess and indulgence, the last craze on binge eating and drinking before Lent starts. Following Lent is not easy. Going completely dry and vegan for several weeks requires strong stamina. Some take it easier nowadays and try to detox or just abstain from favorite foods, but even that is not quite festive, and demands will power.
