Arabic (pita) with kebab and cheese sauce

We make homemade kebabs in Arabic pita with cheese sauce using Arla products, for a beloved and delicious combination.

For the kebabs:

  • 800g ground beef
  • 200g ground pork
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tsp tomato paste
  • 1 tsp cumin, powder
  • 3 tbsp extra virgin olive oil
  • 1 tbsp fresh thyme, finely chopped
  • ½ bunch parsley, finely chopped
  • 50g grated Arla Mozzarella
  • 50g grated kasseri cheese

For the cheese sauce:

  • 200g strained yogurt
  • 200g Arla fresh cream cheese
  • 30g grape molasses (petimezi)
  • 1 tbsp hot harissa paste (optional)
  • A pinch of salt

For serving:

  • 4 Arabic pitas
  • 2 tomatoes, cut in half
  • 1 onion, thinly sliced

Process

Step 1
Kebabs: In a bowl, we add all the ingredients for the kebabs except for the kasseri and the Arla Mozzarella. Knead well for 5 minutes. You can also do this in a mixer with the paddle attachment. Finally, incorporate the Arla Mozzarella and kasseri. Let the mixture rest in the fridge for 6 hours, or overnight if preferred.

Step 2
Cheese sauce: In a bowl, add the hot harissa paste if using, the yogurt, the Arla fresh cream cheese, the grape molasses, and a pinch of salt, and mix until smooth. Leave it in the fridge.

Step 3
Shape the kebabs into 70g sticks each and grill them. Grill the tomatoes as well, and lightly warm the pitas.

Step 4
Serve the kebabs in the pitas along with the grilled tomatoes, onion slices, and cheese sauce.
